INGREDIENTS
- 2 slices of bread – (50-80 grams)
- 2 eggs – (100 – 120 grams)
- 1 avocado – (120 – 150 grams)
- 1 tablespoon olive oil – (13 – 15 grams)
- 1 tablespoon lemon juice – (13 – 15 grams)
- 6 cherry tomatoes – (100 – 120 grams)
- spices to taste – (0,1 – 0,5 grams)
- 1 clove of garlic – (3 – 5 grams)
- half a medium-sized onion – (50-60 grams)
Recipe
1. Heat a dry frying pan well over medium heat, add the bread slices, fry for 2-3 minutes until golden brown, turn over and fry the other side, checking the degree of browning.
2.In a saucepan, bring salted water to a gentle boil. Use a spoon to swirl the water to create a whirlpool. Carefully pour the egg (first broken into a separate bowl) into the center of the whirlpool. Cook for 3-4 minutes, remove with a slotted spoon.
3.Mash the pulp of a ripe avocado with a fork, pour over lemon juice, add finely chopped onion, garlic and tomatoes, as well as salt and oil; mix to the desired consistency – from coarse to puree
